Fish Cakes

These well balanced, full of flavour fish cakes are sure to be a winning dish in your household. Give them a try!

Ingredients
- X1 Middlecut Fish (tin)
- 1/2 cup red pepper (finely diced)
- 1/4 cup coriander (chopped)
- X2 garlic cloves (minced)
- X1 small birds eye chilli
- 3/4 cup breadcrumbs
- 2 eggs (beaten)
- 3 Tbsp plain yoghurt
- 1 Tsp garlic powder
- 1/2 tsp onion powder
- salt and pepper
Instructions
- In a bowl combine the cleaned and prepped middlecut, red pepper, coriander, garlic, breadcrumbs, eggs, plain yogurt, garlic powder, onion powder, birds eye chilli, salt, and pepper.
- Using 1/4 cup to measure, form mixture into balls with using your hands. Press down firmly to make them flat patties.
- Heat up some extra virgin olive oil in a pan and fry on each side for at least 3-4 minutes, until golden brown.
- I suggest serving these with some delicious roasted potatoes and a greek salad, enjoy! (reference image below)
