Make eating fish fun for the whole family with these delicious middle cut fish cakes. These scrumptious cakes are packed with flavour, ticking off nutritional boxes for veg, protein, herbs and of course omega 3’s.

These well balanced, full of flavour fish cakes are sure to be a winning dish in your household. Give them a try!

11 fish cakes 

Ingredients

  • X1 Middlecut Fish (tin)
  • 1/2 cup red pepper (finely diced)
  • 1/4 cup coriander (chopped)
  • X2 garlic cloves (minced)
  • X1 small birds eye chilli
  • 3/4 cup breadcrumbs
  • 2 eggs (beaten)
  • 3 Tbsp plain yoghurt
  • 1 Tsp garlic powder 
  • 1/2 tsp onion powder 
  • salt and pepper 

Instructions

  1. In a bowl combine the cleaned and prepped middlecut, red pepper, coriander, garlic, breadcrumbs, eggs, plain yogurt, garlic powder, onion powder, birds eye chilli, salt, and pepper.
  2. Using 1/4 cup to measure, form mixture into balls with using your hands. Press down firmly to make them flat patties.
  3. Heat up some extra virgin olive oil in a pan and fry on each side for at least 3-4 minutes, until golden brown. 
  4. I suggest serving these with some delicious roasted  potatoes and a greek salad, enjoy! (reference image below)
