

Pasta with creamy veg sauce

This pasta sauce is a great and delicious way to incorporate more veggies into your diet. Making it a fantastic dish all year round.

Ingredients
X 1 cup cooked pasta of your choice (I used San Remo pulse pasta)
X handful cherry tomatoes
X1 cup yellow bell peppers
X1 heap tbsp cottage cheese
X1 tbsp minced garlic
X1 birdeye chilli
X1/2 red onion
Instructions
- Boil pasta according to packaging
- Add a tablespoon of olive oil to a hot pan and cook your cherry tomatoes, yellow pepper and red onion.
- Add your garlic and chillies when the veggies are almost done cooking.
- Add to a blender, once blended, add back into the sauce pan on low heat.
- Stir in your cottage cheese and you can add salt, pepper to taste.
- Once you are happy with the flavour of the sauce, add in your pasta and enjoy.
