Rainbow Crunch Salad with a Spicy Peanut Dressing

This asian crunch salad combines edamame beans, fresh vegetables with a simple and flavourful sauce. It’s perfect for meal prep!

Ingredients

Salad dressing 

  • 3 tbsp peanut butter
  • ¼ cup soy sauce
  • 1 tsp sesame oil
  • 2 tbsp honey
  • 1 tsp chilli crisp plus more for serving
  • 1 tbsp rice vinegar
  • 2-3 garlic cloves
  • 3 tbsp water

Rainbow salad

  • 1 baby white cabbage
  • 1 baby red cabbage
  • 1 whole rep pepper
  • 120g edamame beans
  • 3 tbsp chopped mint
  • spring onion / green onion / sesame seeds to serve

Instructions

Dressing

  • Combine the peanut butter, soy sauce, sesame oil, honey, chilli crisp, rice vinegar, peeled garlic cloves and water in to the food processor or blender and blend until smooth.

Rainbow slaw

  • Slice all the vegetables in a bowl. 
  • Add the edamame beans, mint and spring onion.
  • Pour over ½ the peanut dressing until combined and enjoy! (check image below for an example of how to serve this salad as a well balanced meal)

Notes

Use a nutribullet or food processor to blend the sauce.
