Simple Summer Salad

A good summer salad goes a long way, it’s freshness compliments all protein. Fish, chicken or meat.

Ingredients
- X2 handfuls of lettuce
- X1/2 large cucumber
- X1 small red onion
- X1 cup cherry tomatoes
- X1 tin whole kernel corn in brine
- 1 circle of feta cheese
- Coriander to garnish
- EVOO to drizzle
Instructions
- Wash and cut up all veggies and drain your corn.
- Add to bowl and mix well.
- Garnish with fresh coriander leaves and drizzle with EVOO.
- Serve up with some fresh hake and enjoy for lunch or supper.
Notes
Serve with some fresh hake. Check my “fish taco” recipe for the seasoning of the hake.
