This simple summer salad is the perfect addition to your meals. Easy, light and very refreshing.

Simple Summer Salad

A good summer salad goes a long way, it’s freshness compliments all protein. Fish, chicken or meat.

4-6

Ingredients

  • X2 handfuls of lettuce
  • X1/2 large cucumber
  • X1 small red onion
  • X1 cup cherry tomatoes 
  • X1 tin whole kernel corn in brine
  • 1 circle of feta cheese 
  • Coriander to garnish 
  • EVOO to drizzle

Instructions

  1. Wash and cut up all veggies and drain your corn.
  2. Add to bowl and mix well.
  3. Garnish with fresh coriander leaves and drizzle with EVOO.
  4. Serve up with some fresh hake and enjoy for lunch or supper.

Notes

Serve with some fresh hake. Check my “fish taco” recipe for the seasoning of the hake.
