Tomato Soup

I got a little creative by adding some exotic tomatoes, but you can use any kind you like!

Ingredients
- 2 Onions
- 1 Garlic bulb
- 1,3 kg mixed tomatoes (I used X4 large tomatoes & 2 handfuls cherry tomatoes)
- 2 Tbsp extra virgin olive oil
- 1 Tbsp rosemary
- 1 Tbsp basil
- 1 tsp thyme
- 1 tsp pepper
- 2 Tbsp sugar
- 1/2 cup of milk or cream of choice
Instructions
- Chop up tomatoes, onions and top of garlic bulb, season in spices and drizzle with extra virgin olive oil.
- Roast vegetables in the oven for 1h 10mins.
- Once cooled add the roasted veg and garlic into a blender and blend until smooth.
- Add the mixture into a pot and warm in through, this is where you can add milk/cream of choice. (I added about 1/2 cup of milk just for some creaminess but you can skip this step entirely)
- Serve warm and I highly recommend adding a cheese toasty on the side to add more fibre and protein. Enjoy!
