This healthy pastrami sandwich is packed with delicious flavours of— pickled onion, cottage cheese, chives and fresh crunchy vegetables.

Ingredients

  • 2 slices high fibre bread
  • 3 slices pastrami
  • 2 tbsp fat-free cottage cheese 
  • 1 tbsp chopped jalapenos
  • Sliced cucumber 
  • Sliced tomato
  • Microgreens 
  • Pickled onions

Instructions

  1. Add the chopped jalapenos to the cotttage cheese and mix until combined.
  2. Put the sandwich together by spreading the cottage cheese on both slices then layer the pastrami, cucumber, tomato and pickled onion, cut in half and enjoy!
