I got a little creative by adding some exotic tomatoes, but you can use any kind you like!
Ingredients:
2 Onions
1 Garlic bulb
1,3 kg mixed tomatoes (I used X4 large tomatoes & 2 handfuls cherry tomatoes)
2 Tbsp extra virgin olive oil
1 Tbsp rosemary
1 Tbsp basil
1 tsp thyme
1 tsp pepper
2 Tbsp sugar
1/2 cup of milk or cream of choice
Instructions:
Chop up tomatoes, onions and top of garlic bulb, season in spices and drizzle with extra virgin olive oil.
Roast vegetables in the oven for 1h 10mins.
Once cooled add the roasted veg and garlic into a blender and blend until smooth.
Add the mixture into a pot and warm in through, this is where you can addmilk/cream of choice. (I added about 1/2 cup of milk just for some creaminess but you can skip this step entirely)
Serve warm and I highly recommend adding a cheese toasty on the side to add more fibre and protein. Enjoy!
