Ultimate Balanced Sandwich

Ingredients:
- 2 slices high-fibre bread
- 3 slices pastrami
- 2 tbsp fat-free cottage cheese
- 1 tbsp chopped jalapeños
- Sliced cucumber
- Sliced tomato
- Microgreens
- Pickled onions
Instructions:
- Mix chopped jalapeños into cottage cheese.
- Spread the mixture onto both slices of bread.
- Layer pastrami, cucumber, tomato, pickled onions, and microgreens.
- Close the sandwich, slice in half, and enjoy.
