Salmon Poke Bowl on a budget
If you love poke bowls but want a more affordable option, this salmon poke bowl is the perfect choice. Using canned or smoked salmon, it’s a quick, budget-friendly way to enjoy a nourishing and flavour-packed meal. With fresh veggies, rice, and a creamy soy-mayo dressing, this recipe makes a simple yet satisfying easy dinner or lunch idea.

Ingredients:
- ½ cup brown rice, cooked
- ½ can salmon (about 200g) or substitute smoked salmon if you prefer
- 1 tbsp reduced-oil mayonnaise
- 2 tbsp soy sauce
- 3 baby cucumbers, sliced
- 1 nori sheet, cut in half
- Optional garnishes: crispy onions, sriracha sauce, spring onion, chilli flakes
Instructions:
- Prepare the salmon mixture: In a small bowl, combine salmon with mayonnaise, soy sauce, and chilli flakes (if using).
- Assemble the bowl: Add the cooked brown rice to a serving bowl. Arrange cucumber slices on top, then spoon over the salmon mixture.
- Finish with toppings: Garnish with spring onion, crispy onions, and a drizzle of sriracha sauce for extra flavour.
- Serve with nori: Use the nori sheets to scoop up your poke bowl and enjoy!
