Creamy Tomato Soup Recipe

This classic tomato soup is comforting, flavourful, and easy to make with just a handful of wholesome ingredients. Roasted onions, garlic, and mixed tomatoes give it depth, while a touch of cream or milk makes it velvety smooth. Perfect for cosy winter meals, and even better served with a golden cheese toasty on the side for added fibre and protein.

Ingredients:

  • 2 onions
  • 1 garlic bulb
  • 1.3 kg mixed tomatoes (e.g., 4 large tomatoes + 2 handfuls cherry tomatoes)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp rosemary
  • 1 tbsp basil
  • 1 tsp thyme
  • 1 tsp black pepper
  • 2 tbsp sugar
  • ½ cup milk or cream of choice (optional, for creaminess)

Instructions:

  1. Preheat oven to 180°C.
  2. Chop tomatoes and onions. Slice the top off the garlic bulb. Place everything on a baking tray.
  3. Season with rosemary, basil, thyme, pepper, and sugar, then drizzle with olive oil.
  4. Roast for 1 hour 10 minutes until soft and caramelised.
  5. Allow to cool slightly, then blend until smooth.
  6. Transfer to a pot, reheat gently, and stir in milk/cream if desired.
  7. Serve warm with a cheese toasty — the ultimate comfort food pairing
