Dark Chocolate Cups
These dark chocolate cups are a rich, satisfying treat designed with PCOS, insulin resistance, Hashimoto’s, and endometriosis in mind. Using 70% baking chocolate and nutrient-dense whole food ingredients, this chocolate recipe offers a delicious way to indulge while keeping blood sugar and hormone health in check.
Fibre from the granola helps slow glucose release, healthy fats from nut butter support hormone production, and antioxidants from dark chocolate may help reduce inflammation. They’re perfect for portion-controlled snacking, a healthy dessert, or adding a touch of decadence to your meal prep.

Ingredients:
- 1 cup All Bran Super-seed & Oat Crunch granola (or any high-fibre granola)
- ½ cup 70% chocolate chips (or chopped high-quality baking chocolate)
- 3 tsp nut butter of choice (almond, peanut, or cashew
Instructions:
- Make the base: In a food processor, blend the granola and nut butter until the mixture sticks together.
- Melt the chocolate: Place the chocolate chips in a heatproof bowl. Microwave in 15-second intervals, stirring between each, until smooth. (Alternatively, melt over a double boiler.)
- Assemble the cups: Spoon 1½ tablespoons of the granola mixture into each hole of a muffin tray. Press down firmly to form an even base.
- Add the chocolate layer: Pour a thin layer of melted chocolate over each base, spreading to the edges.
- Set: Place in the freezer for 30 minutes or until firm.
- Serve & store: Remove from the tray and store in an airtight container in the fridge (up to 1 week) or freezer (up to 1 month).
Notes:
Sprinkle sea salt, crushed nuts, or freeze-dried berries over the chocolate before setting for extra flavour.
Choose a granola with at least 6g fibre per 100g for better blood sugar balance.
