Rainbow Crunch Salad with a Spicy Peanut Dressing
If you’re looking for a fresh and flavour-packed salad recipe, this rainbow crunch salad is the one! Loaded with cabbage, edamame beans, and red pepper, it’s tossed in a creamy, spicy peanut butter dressing that’s both satisfying and nutrient-dense.
It’s one of those salad ideas that works perfectly for meal prep recipes, make a big batch, store it in the fridge, and enjoy quick, easy salad bowls all week. The dressing doubles as a versatile salad dressing recipe you can drizzle over bowls, roasted veggies, or even noodles.

Ingredients:
Spicy Peanut Dressing
- 3 tbsp peanut butter
- ¼ cup soy sauce
- 1 tsp sesame oil
- 2 tbsp honey
- 1 tsp chilli crisp (plus more for serving)
- 1 tbsp rice vinegar
- 2–3 garlic cloves
- 3 tbsp water
Rainbow Salad
- 1 baby white cabbage, thinly sliced
- 1 baby red cabbage, thinly sliced
- 1 red pepper, sliced
- 120g edamame beans
- 3 tbsp chopped mint
- Spring onion / green onion, for garnish
Sesame seeds, for garnish
Instructions:
Make the Dressing
- Add peanut butter, soy sauce, sesame oil, honey, chilli crisp, rice vinegar, garlic, and water to a blender or food processor.
- Blend until smooth and creamy.
Assemble the Salad
- Place sliced cabbage, red pepper, edamame beans, and mint into a large bowl.
- Pour over half the dressing and toss until well combined.
Top with spring onion, sesame seeds, and an extra drizzle of chilli crisp if you like
Notes:
💡 A Nutribullet or food processor makes blending the dressing super quick.
💡 The peanut dressing can also be used as a dip for fresh veggies or spring rolls.
