Simple Summer Salad

Ingredients:

  • 2 large handfuls lettuce (mixed greens or romaine)
  • ½ large cucumber, sliced
  • 1 small red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 tin whole kernel corn in brine, drained
  • 1 round of feta cheese, crumbled
  • Fresh coriander leaves, for garnish
  • Extra virgin olive oil (EVOO), to drizzle

Instructions:

  1. Wash and chop all vegetables, then drain the corn.
  2. Add lettuce, cucumber, onion, tomatoes, corn, and feta into a large salad bowl.
  3. Toss together gently. Garnish with fresh coriander and drizzle with EVOO.
  4. Serve immediately with your choice of protein — fish, chicken, or meat.
